I'm not going to pretend the ins and outs of this, but, in laymen's terms, if you blur an image above and below the object you want to focus on, you get this effect:
They might look like models, but those are all full-size ships.
Anyway, the main reason I'm even making this thread is for this video, which I think is absolutely amazing:
