afaik you can't cancel those.

I think the system would definitely benefit from having some form of interface where you could see what ships you have being built, where, their progress and a cancel order.

Far as I know you can only have one ship at a time being built, if you suddenly decide you want a different ship than the one currently being built just pick a new one and it cancels the previous one.
